HELP!

So I have been in NY for the past 2 months. As I mentioned before, going home is ALWAYS a struggle, because I ALWAYS gain! I swore this time was gonna be different. Though I have been trying to work out when I can, and follow a diet here, I am sad to say this time was NO exception. My weight-loss has been about as consistent as this blog! Sadly, I have gained several pounds since I have been here. I swear it just sneaks up on you! Why is so hard to lose a pound, but so easy to gain 10? In 3 weeks I will be at home. I’ll be back in that Salvadorian heat, where I’ll lose 5 lbs without even trying, because all I do is sweat! I want to keep working out, and trying to lose during the next few weeks, because I hate going home bigger than I came, but I know that when I go home, and there is not all this good food around, I will be back on track. I’ll also be a little less busy, so I will have more time to dedicate to working out! Hopefully, I can undo the damage I have done, and then some!

Confession and Disappointment

Ok, I confess, I did not eat super healthy this week. I already told you about the soda and cookies, but there were also brownies, some pancakes, and pizza! In my defense, I still at way less of these things then I normally would. 2 brownies out of the 8 I made, and 2 slices of a 10″ pizza is not that much compared to what I wanted to eat! I did work out good this week though. I did Zumba 3 times, belly dancing one day, and Tae Bo another day. While I didn’t deserve to lose my desired 3 lbs because of how I ate, I do think that my workouts should have gotten me down 1 lb! The result: a measly 0.3! I was soooo disappointed about it, but I guess I have to be happy it’s a 0.3 in the right direction at least! This week I have my diet bars, I have tons of fruit, and vegetables in the house, and I will have no excuse. I WILL lose 3 or more pounds this week, or else!

Avocado and Chicken Quesadillas

I made thee simple, yet yummy quesadillas the other day for lunch, and they were so good I made them again today!

Avocado and Chicken Quesadillas (serves 2)

Ingredients:

4-6 inch flour tortillas

1- ripe avocado

1-small red onion (sliced)

1-cut-up, grilled chicken breast (leftovers work well!)

1/4 cup-crumbled cheese (feta, blue cheese, etc)

Salt and Pepper to taste

What to Do: Pre-heat oven to 350 F. Lay the tortillas on an ungreased cookie sheet. Remove the avocado from peel and divide into four sections. Place one section on half of each tortilla, and mash it with a fork. Add the chicken, onion and cheese on top of the avocado along with some salt and pepper. Fold over the tortillas. Place in oven for 10-15 mins, flipping them halfway through. When slightly browned remove from oven and serve!

Recovering from the Weekend

Why are the weekends so hard? I swear, I’m good all week, but the minute the weekend comes, all I want to do is eat! This weekend was especially bad, because I sent my husband to the grocery store. He has this habit of adding things to my list. This weekend, he added soda, cookies, and chips, and FORGOT my low-fat granola bars! Since it was there, and my snacks were not, I gave in. Clearly, my husband didn’t make me eat cookies and drink soda, but it is just so hard to say no! All in all, I could have been a lot better, but I could have been a lot worse too! I think I’m just feeling guilty because I didn’t workout today, and redeem myself. Well, tomorrow is a new day, and a I WILL work out, and I WILL eat better! I have to…the soda and cookies are gone!
